The Holiday Cocktail – A Recipe

We present an easy interpretation of a cocktail featured on our latest drinks list. Designed as a batch premix that's bursting with tastes of a Christmas time, which makes it excellent for a festive gathering. Reserve the remaining syrup to use in breakfast cocktails, puddings, or for additional servings of bikinis.

The Bikini Cocktail

Yields 10 servings

To make the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Premix (makes 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

For the Syrup: Put the listed ingredients in a pot, heat until it reaches a simmer, agitating so the sugar melts. Next, remove from the stove and let it to cool down entirely. Pour to a clean bottle, seal keeping it chilled, it can be stored for up to one month.

For the Batch Mix: Pour all the liquids into one sizeable container, leave to sit for an hour, then pass it through preferably using a fine cloth, so it's perfectly clear.

For serving: Pour 85ml from the batch mix to a cocktail shaker packed with ice, and agitate gently for one minute until cold. Filter to a frosted cocktail glass or equivalent, decorate with some cranberries and finish by giving it a quick spritz with the mandarin essence over the drink.
